Ingredients for 1 servings:
- 400 g flour
- 400 g sugar
- 650 g butter, soft
- 7 eggs
- 1 packet of baking powder
- 1 shot of milk
- 1 lemon(s), untreated
- 4 packs of food coloring, assorted colors
- 500 ml milk
- 1 ½ packs of pudding powder
- 1 pack of Smarties
- 40 chocolate bars (Kit-Kat)

Place flour, sugar, 400g butter, eggs, and baking powder in a bowl. Finely grate the lemon zest and add it along with the lemon juice. Mix everything together to form a dough, adding a splash of milk if desired. Preheat the oven to 170°C. Now take about a quarter of the dough and, in a small bowl, color it brightly with the first food coloring. It looks especially beautiful if the dough is colored one after the other in rainbow colors. Grease a round springform pan and sprinkle the bottom with a little flour. Bake the first cake layer for about 25 minutes (depending on the oven). Refrigerate the remaining batter while it bakes. Meanwhile, prepare the buttercream. For this, prepare the custard powder with the milk according to the instructions. Allow to cool, stirring occasionally. Only then add the 250g butter a spoonful at a time and mix well. Once the first cake layer is cooked through (test with a toothpick!), turn it out onto a cake plate. A thin layer of buttercream is applied. The remaining cake layers are then treated in the same way as the first: Remove a quarter, color it with new (each time a different) food coloring, bake for 25 minutes, and then turn it out onto the previous cake layer, then spread a thin layer of buttercream. Since the cake layers are quite thin, stacking them can be quite tricky. It works well if you turn the layer out onto a second cake plate, then carefully turn it halfway onto your hand, placing the cake on top of the lower layer. This way, the side that will crumble less when the buttercream is applied is on top. Once all the layers are stacked, the remaining buttercream (should be about half) can be spread on and around the cake, ideally so that no color shows through. The “Kit-Kats” can now be broken off individually and placed around the cake by lightly pressing them against the buttercream. Now just sprinkle the Smarties on top and the perfect rainbow cake is ready! This recipe can be quite time-consuming due to the long baking time. You should plan on about four hours and possibly two people working on it. But it will definitely be worth the effort!
