Raisin doughnuts

Ingredients for 4 servings:

  • 500 g flour
  • 40 g yeast
  • 80 g sugar
  • 250 ml milk, lukewarm
  • 80 g margarine or butter
  • 2 eggs
  • ½ tsp salt
  • 1 lemon(s), zest
  • 120 g raisins
  • 1 kg oil or vegetable fat
  • 80 g sugar, some cinnamon if desired

Instructions

Working time approx. 40 minutes; Rest time approx. 55 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 45 minutes

Put the flour in a bowl and make a well in the center. Crumble in the yeast. Sprinkle a teaspoon of sugar over the dough and mix with lukewarm milk to form a dough. Cover everything with a kitchen towel and let it rise in a warm place for 15 minutes. In the meantime, melt the margarine or butter. Mix the eggs, salt, and remaining sugar in a separate bowl. Add this mixture to the yeast dough. Knead everything with a hand mixer until you have a smooth, supple dough. Wash the raisins under hot water and dry them, then knead them into the dough. Cover the dough and let rise for 20 minutes. On the work surface, shape the dough into small balls with flour and cover them on a baking sheet lined with baking paper. Let rise for 20 minutes. Heat fat in a pot or deep fryer to approx. 180°C. Bake 4-6 doughnuts until crispy and brown, then remove, drain, and roll in sugar and cinnamon. The treats are ready. The whole amount has about 3900 Kcal
