Soak the raisins in hot water. Mix the flour with the dry yeast. Add the quark, butter, eggs, honey, milk, and a pinch of salt and knead everything together well. Cover the dough and let it rise in a warm place for about an hour. Then add the raisins and knead thoroughly again. Form about 15 rolls and let them rise for another 45 minutes on a baking sheet lined with baking paper. Preheat the oven to 180°C. Whisk the egg yolk with a little milk, brush the rolls with it, and sprinkle with sugar. Bake for about 25 minutes. The rolls are delicious for breakfast, with coffee at lunch, or for brunch. They also freeze well.
