Raspberry Cookie Ice Cream

Ingredients for 5 servings:

  • 1 pack of cookies (chocolate cookies)
  • 5 tbsp milk
  • 300 g raspberries, frozen
  • 1 cup crème fraîche
  • 100 ml cream
  • 1 packet of vanilla sugar
  • 2 tbsp sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

For the ice cream machine

Thaw the raspberries halfway. Break the cookies into small pieces, drizzle with milk, and let them soften slightly. Mash the thawed raspberries with a fork until they are still slightly chunky. Add the crème fraîche and mix vigorously with the raspberries. In a large bowl, whip the cream with the vanilla sugar until stiff peaks form. Fold the cookies, raspberry mixture, and sugar into the cream. Pour the mixture into the ice cream maker and freeze.
