Raspberry Dumplings with Vanilla Sauce and Berry Composition
The perfect raspberry dumplings with vanilla sauce and berry composition recipe with a picture and simple step-by-step instructions.
For the dumplings
- 500 g Curd
- 4 Pc. Egg yolk
- 150 g Semolina
- 50 g Breadcrumbs
- 6 tbsp Sugar
- 1 Msp Salt
- 50 g Butter
- 200 g Wheat flour
- 10 Pc. Raspberries
- 100 g Butter
- 200 g Flour
- 100 g Sugar
For the vanilla sauce
- 400 ml Cream
- 300 ml Milk
- 1 Pc. Vanilla pod
- 200 g Sugar
- 7 Pc. Egg yolk
- 1 Msp Salt
For the berry composition
- 5 Pc. Gelatin sheet
- 300 ml Berry juice
- 1 shot Lemon juice
- 10 Pc. Blackberries
- 5 Pc. Raspberries
- 5 Pc. Basil leaves
elderberry syrup
- 1 kg Elderberries
- 750 ml Water
- 300 g Sugar
- 1 Pc. Lemon fruit juice
- For the vanilla sauce, cut the vanilla pod in half, scrape out the pulp and bring the milk and cream with the pulp, vanilla pod, sugar and a little salt to the boil. Then remove the pod. Heat the egg yolks in a bowl over a water bath and stir in the vanilla milk while stirring constantly. Slowly heat the whole thing, stirring constantly, until the mixture thickens. Then quickly take the sauce out of the water bath and cool!
- For the berry jelly, use the elderberry syrup from the starter and dilute it with water and lemon juice until the taste is softer. Gently heat about 300 ml of this berry juice and mix it with gelatine, then put it in a mold in the refrigerator. When the jelly cools down, it can be cut. Important! When serving, the plate should be cold as the gelatine melts again when it is warm!
- For the dumplings, mix the curd cheese with the semolina, melted butter, flour, salt, sugar, 4 egg yolks and the breadcrumbs to form a dough and refrigerate it. In the meantime, make the shortcrust pastry crumbs. For this, butter is browned with flour and sugar in the pan and then cooled.
- Shape the dumpling dough into small dumplings and insert a raspberry. Then cook the dumplings in simmering water for about 7 minutes. The water must not be too hot, otherwise the dumplings could fall apart.
- In the meantime, prepare the plates with the vanilla sauce and the berry composition. Remove the dumplings from the water and drain. Then roll in the shortcrust pastry crumbs and serve hot.
