Ingredients for 1 servings:

  • 10 g raspberries, frozen
  • 250 g sugar, fine

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 15 minutes

Pink sugar with raspberry flavor

Thaw frozen fruit first, then puree or mash it finely. Gradually add the sugar and mix well with a spoon or your fingers. Add less sugar to your taste; the sugar will then take longer to dry and will be fruitier. Spread the mixture on a baking tray lined with baking paper and dry at 80°C fan-assisted oven for approx. 1-2 hours, removing it from the oven to loosen it up and mix it in half. Once dry, sift the sugar as finely as desired and transfer it to an airtight container. Instead of drying the mixture in the oven, press it firmly into silicone ice cube trays and let it dry on the radiator to create pink sugar cubes. Suitable for decorating pastries, sweetening quark dishes and yogurt, as tea sugar, for sugar rims on cocktail glasses, etc. Also works with other berries, e.g., as blackberry sugar or strawberry sugar.
