Ratatoille BBQ-like – Vegetarian
The perfect ratatoille bbq-like – vegetarian recipe with a picture and simple step-by-step instructions.
- 4 Pc. Paprika
- 4 Pc. Fresh tomato
- 500 g Mushrooms
- 1 Pc. Leek
- 1 Pc. Onion red
- 4 Pc. Clove of garlic
- 2 pinch Chili powder
- 500 g Broccoli
- 200 g Grated Emmental
- 3 teaspoon Bbq spice mix
- 250 ml Vegetable broth
- 100 g Butter
- 1 Pc Eggplant fresh
- 2 tbsp Vegetable fat
- Wash the bell peppers and tomatoes and remove the seeds or stems. Grill everything together for about 20 minutes in the oven grill on the middle rack at 170 ° C, so that the skin turns a little brown. Add a little salt to the water for the broccoli and heat it up. At the same time, wash the aubergine and cut into 5mm wide slices. Then fry them in a pan with a little vegetable fat. Season with chilli + garlic on both sides. Put the slices in a baking dish.
- Finely chop the onion. Cut the leek into rings. Braise both together with the butter and some vegetable fat in a pan until translucent. When almost done, put the garlic cloves through a press and add them directly to the pan and braise with them. Then take it out and fill it in the baking dish. In the same pan, braise the mushrooms with a little vegetable fat and place in the baking dish.
- When the water for the broccoli is bubbling, remove the heat and blanch the broccoli in it for 2 minutes. Then take it out immediately and soak in ice water. Also put the broccoli in the baking dish. Now the peppers and tomatoes should be ready: Take them out of the oven and cut them into cubes on a cutting board and also fill the baking dish. Pour the vegetable stock over the mixture.
- Sprinkle the whole thing in the pan with BBQ Rub (e.g. Stoertebecker Magic) and finally pour the cheese over it. Cover the casserole dish and bake it for about 30 minutes at 170 ° C (190 ° O / U heat). I also had spaetzle. Good Appetite!!!
