Ingredients for 1 servings:

  • 350 g flour
  • 225 g butter, soft
  • 65 g sugar
  • 1 pinch of baking powder
  • 1 pinch of salt
  • 1 egg(s)
  • 1 packet of vanilla sugar
  • 1 lemon(s), peel
  • 10 drops of bitter almond flavor
  • 150 g jam, red or dark
  • powdered sugar

My grandma’s Christmas cookies, uncomplicated

Beat butter, egg, sugar, and vanilla sugar until creamy. Add the almond extract and lemon zest. Slowly add the flour, baking powder, and salt. Knead with your hands until a soft dough forms, then refrigerate for 30 minutes. Roll out on a floured surface and cut out round shapes approximately 2 mm thick. Place 1/2 teaspoon of jam in the center of half of the cut-out pieces. We like blackcurrant jam best, but cranberry or plum jam also works well. Cut a cross in the center of the other half and place it on the jam-filled cookies. Press the edges together with a pastry fork or similar tool. Place on a baking sheet lined with baking paper and bake in the oven at 180°C for 10 to 12 minutes. Once cooled, dust with powdered sugar. TIP: Don’t put too much jam on the cookies. Otherwise, it will run out during baking and won’t look as nice. Makes approx. 40 pieces.
