Ingredients
- 2 kg Floury potatoes
- 200 g Pork bacon raw smoked
- 5 Chopped onions
- 1 tbsp Olive oil
- 80 g Butter
- 250 ml Chicken broth
- 0,5 tsp Ground pepper white
- 0,5 tsp Freshly grated nutmeg
- 0,5 tsp Dried marjoram
- 1 pinch Cayenne pepper
- 0,5 tsp Salt
- 1 head Endive or leaf salad
- 1 clove Garlic
Instructions
- Peel the potatoes, wash and cut into small pieces. And cook it in salted water. Cut the bacon into small cubes and fry in olive oil with the onions. Add the butter and fry for another 5 minutes ... Add the stock and garlic and reduce for approx. 8 minutes.
- Season to taste with pepper, marjoram and nutmeg. Cut the endive salad into very fine strips. Drain the potatoes and mash them to a pulp. And add the bacon mixture to the reduced onion ..... stir well .....
- Salt the freshly cut endive salad and fold it into the potato mixture .. If necessary, season with salt and coarse pepper ..... Let everything sit on the warm stove for 5 minutes ... Delicious ... hihi
