Raw salmon on radish with wasabi sauce

Ingredients for 4 servings:

  • 1 chili pepper(s), red, pitted, cut into thin strips
  • 1 chili pepper(s), green, pitted, cut into thin strips
  • 30 g ginger, cut into thin sticks
  • 3 tbsp vinegar
  • 1 tbsp sugar
  • 150 g radish(s), peeled, cut into wafer-thin slices
  • 3 tbsp soy sauce
  • 150 g salmon fillet(s), 1 – 2 mm thin slices, sushi quality
  • 3 tbsp wasabi paste
  • 1 tbsp sugar
  • 1 ½ lime(s), the juice
  • Salt

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

Japanese-style appetizer

For the wasabi sauce, combine the ingredients and season to taste. In a bowl, toss the radish slices with the soy sauce and let stand for 5 minutes. Then arrange on 4 plates. Bring the ginger, vinegar, sugar, and 2 tablespoons of water to a boil and cook until the liquid has almost evaporated. Let cool. Place the salmon slices on the radish, garnish with chili strips and ginger sticks. Serve drizzled with the wasabi sauce. A young sake goes well with this dish.
