Ingredients for 6 servings:
- 2 kg beef brisket
- 180 g salt
- 100 g brown sugar
- 1 stalk(s) cinnamon, broken into several pieces
- 1 tsp mustard seeds
- 1 tsp peppercorns, black
- 8 cloves, whole
- 8 grains of allspice
- 12 juniper berries
- 2 bay leaves, crumbled
- ½ tsp ginger powder
- 2 liters of water
- 1 tsp peppercorns, black
- ½ tsp mustard seeds
- ½ tsp all-spice
- ¼ tsp clove(s), whole
- 4 garlic cloves, sliced
- 1 small onion(s), quartered
- 1 large carrot(s), cleaned, cut into large pieces
- 1 stalk(s) celery, cleaned, cut into large pieces
- n. B. water
- possibly curing salt
Instructions
Working time approx. 30 minutes; Rest period approx. 10 days 2 hours; Cooking/baking time approx. 4 hours 30 minutes; Total time approx. 10 days 7 hours
takes time – but is so delicious
To marinate, bring the water, salt, sugar, cinnamon stick, mustard seeds, peppercorns, cloves, allspice berries, juniper berries, bay leaves, and ginger powder to a boil in a large pot on the stovetop. Boil until the salt and sugar have dissolved, remove from the heat, and let cool. Then refrigerate until the marinade is completely cool. Place the meat in a large freezer bag and add the marinade. Seal the bag tightly, lay flat in a container, and refrigerate for 7-10 days. Turn the bag once a day during the marinating days. On the 7th or 10th day, remove the meat from the marinade and rinse thoroughly under cold water. Place the brisket in a sufficiently large pot and add enough water to just cover the meat. Add the peppercorns, mustard seeds, allspice, cloves, garlic, onion, carrot, and celery stalk. Bring everything to a boil on the stovetop, then reduce the heat, skim off any foam, and cover. Let the meat simmer gently for 3-4 hours. Then remove the pot from the heat and lift out the meat. It should now be wonderfully tender. Note: You can also add 2 tablespoons of curing salt to the brine. This authentic corned beef tastes delicious on a Reuben sandwich (in my recipes) or with white cabbage and mashed potatoes.
