Ingredients for 4 servings:

  • 1 kg potato(s), floury
  • 60 g butter
  • 1 egg yolk
  • 250 ml milk, hot, or up to half a liter, as required
  • salt and pepper
  • nutmeg
  • 250 g applesauce
  • 125 ml cream
  • curry
  • Spice mix (Asian spice or similar)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

with applesauce

Peel and wash the potatoes, then boil them in salted water until soft. Drain the water and let the potatoes steam. While still hot, press them through a potato ricer or mash them with a masher. While stirring constantly, add the butter, egg yolk, and milk. Season with salt and freshly grated nutmeg. Finally, fold in the applesauce and cream.
