Hungarian minced meat soup

Ingredients for 20 servings:

  • 5 large onions
  • 3 stalk(s) leeks
  • 2 bunch spring onions
  • 8 carrots
  • 5 large bell peppers, red
  • 10 large potatoes
  • 3 kg minced meat
  • 60 ml oil
  • 2 can/n tomatoes (Pizza tomatoes)
  • 3 liters of vegetable broth
  • Salt
  • pepper
  • 2 tsp caraway seeds, ground
  • 2 tbsp paprika powder, hot

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Chop the onions, slice the leeks and spring onions, and slice the carrots. Dice the bell peppers. Peel the potatoes and also cut them into small cubes. In a very large pot, fry the minced meat in oil until crumbly. Add the onions and cook until translucent. Then add all the remaining ingredients and bring to a boil. Cover and simmer over low heat for about 2 hours. Season again with salt, pepper, and paprika before serving.
