Ingredients for 5 servings:

  • 250 g lamb’s lettuce
  • 4 beetroot bulbs
  • e.g. vegetable broth
  • 1 roll(s) of mozzarella
  • 2 tsp balsamic vinegar, lighter
  • 1 tsp olive oil
  • ½ tsp Crema di Balsamic vinegar
  • 2 sprigs of thyme
  • e.g. walnuts, chopped

Instructions

Working time approx. 35 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 25 minutes

Cook the beets in vegetable stock, let it cool, and peel them. Prepare the dressing in a shaker. To do this, mix the white balsamic vinegar with the balsamic cream, salt, and pepper. Pick the thyme leaves and add them with the olive oil. Shake well and set aside. Slice the beets and place them in a separate bowl. Pour some of the dressing over the beets and let it marinate, then toss the lamb’s lettuce with the rest of the dressing. Slice the mozzarella. Build towers from three slices of beetroot and three slices of mozzarella, then arrange the lamb’s lettuce around the outside. Garnish the tower with some thyme for decoration.
