Gnocchi salad with arugula and pine nuts

Ingredients for 4 servings:

  • 500 g gnocchi
  • 2 tomatoes
  • 1 bunch arugula
  • 50 g pine nuts
  • 3 tbsp olive oil
  • 3 tbsp water
  • 1 tbsp balsamic vinegar, lighter
  • salt and pepper
  • lemon juice
  • 1 tbsp Parmesan

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 2 minutes; Total time approx. 17 minutes

Cook the gnocchi according to the package instructions, then let cool. In the meantime, cut the arugula into bite-sized pieces. Finely dice the seedless tomatoes. Roast the pine nuts in a dry, nonstick pan. Make a dressing with olive oil, water, balsamic vinegar, salt, pepper, and lemon juice. Mix the gnocchi, tomatoes, arugula, and pine nuts well with the dressing. Serve in a glass dish and sprinkle with Parmesan cheese. The arugula and pine nuts add a wonderful flavor to the salad!
