Ingredients for 4 servings:

  • 1 kg red cabbage
  • ⅛ liter red wine
  • 1 tbsp sugar
  • 1 tsp ginger
  • 1 tsp cinnamon
  • 4 cloves, crushed
  • 6 tbsp jelly (cranberry jelly)
  • 6 tbsp jelly (red currant jelly)
  • 8 tbsp applesauce
  • 150 g cream
  • salt and pepper
  • 4 bay leaves

Working time approx. 25 minutes; Total time approx. 25 minutes

that’s how my mum always makes it

Remove the outer leaves from the red cabbage. Then quarter the cabbage and remove the stalk. Either grate it finely or cut it into strips with a knife. Then add it to a saucepan with the red wine and simmer for about 15 to 20 minutes. Add the sugar, ginger, cinnamon, cloves, bay leaves, salt, pepper, cranberry jelly, and blackcurrant jelly and simmer for about 45 to 60 minutes. Finally, add the applesauce and cream and season again with the spices to taste. Tip: Can be prepared a day in advance and tastes even better reheated. Also suitable for freezing.
