Ingredients for 4 servings:

  • 3 potatoes, floury
  • 2 m.-large carrot(s), peeled
  • 2 eggs
  • 10 tbsp green peas (can)
  • 3 m.-large gherkins, finely chopped
  • 4 tbsp mayonnaise (e.g. Hellman’s)
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Cook the unpeeled potatoes, carrots, and eggs separately. Let cool. Then peel the potatoes and eggs. Chop them together with the carrots and place them in a bowl. Add the peas and the equally finely chopped gherkins. Mix in the mayonnaise. Season to taste and serve. Serve with bread. The salad can also be served as a side dish to meat dishes.
