Ingredients for 4 servings:
- 250 g red cabbage
- 1 spring onion(s)
- 3 small oranges
- 1 lemon(s)
- 1 pear(s)
- 1 banana(s)
- 5 walnuts
- 2 tsp honey
- 3 tbsp walnut oil
- 1 tsp, leveled salt
- pepper
Instructions
Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 10 minutes
Trim and wash the red cabbage, and finely slice it with a mandoline. Toss it in a large bowl with a small teaspoon of salt. Fillet two small oranges (or one large one) and cut into small pieces. Wash the pear, quarter it, remove the core, and cut it into thin wedges. Halve the lemon and one orange and juice the juice. Meanwhile, toast the walnuts in a dry pan, place them on a small plate, and set aside. Heat walnut oil in the pan and briefly fry the pear slices, drizzle with honey, and let them brown. Pour the lemon and orange juice over the pears and remove the pears. Add the chopped spring onions, oranges, and pear to the red cabbage. Pour over the lemon-orange caramel mixture and season with pepper. Sprinkle the walnuts over the red cabbage and fruit salad and let it sit for 30 minutes. Chop the banana and mix in before serving.
