Red cabbage in a pressure cooker

Ingredients for 6 servings:

  • 200 g bacon
  • 1 medium-sized onion(s), diced
  • 1 cup water
  • 700 g applesauce
  • 3 carnations
  • 2 bay leaves
  • 1 handful of rice
  • 1 head of red cabbage
  • 1 shot of apple cider vinegar or herbal vinegar
  • 1 tbsp sugar
  • salt and pepper

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 55 minutes

Dice the onion and slice the red cabbage, then set aside. Fry the bacon in the pot, add the onions, and sauté. Remove the bacon. Deglaze with a cup of water and season with salt and pepper. Add half of the finely chopped red cabbage. Add the cloves, bay leaves, and sugar, then add the other half of the red cabbage. Press down gently and spread a handful of rice on top. Close the pressure cooker. As soon as the valve opens, cook for 10 minutes. Reduce the heat. Open the pot and mix in the applesauce and vinegar. Simmer for a few minutes. Remove the cloves and bay leaves before serving.
