Red cabbage with pear

Ingredients for 5 servings:

  • 1 red cabbage, approx. 1.2 kg
  • 60 g clarified butter
  • 1 onion(s), red
  • 2 bulb(s)
  • 1 tbsp, leveled cane sugar
  • 2 tbsp balsamic vinegar
  • 250 ml pear juice
  • 1 bay leaf
  • 4 cloves, crushed
  • 1 cinnamon stick(s)
  • Salt
  • 150 g cranberries, fresh

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Alternative to the classic

!Put on gloves! First, remove the outer leaves. Then quarter the cabbage head, remove the stalk (I simply make a wedge-shaped cut), and cut the cabbage into fine strips. I use a very sharp knife for this, but a slicer will do. Peel and dice the onion. Peel, core, and slice the pears. Sauté the onions in clarified butter and caramelize them with the sugar. Add the pears and red cabbage and fry briefly. Deglaze the pan with the pear juice. Add the bay leaf, crushed cloves, balsamic vinegar, and cinnamon stick. Simmer the mixture with the lid on for about 40 minutes over medium heat, stirring occasionally. Finally, add the cranberries and simmer for another 20 minutes.
