Sheet cake recipe with red currants

This recipe for a sheet cake with red currants is very simple and the cake is ready in no time. Make the dough from 450 grams of flour, 1 packet of baking powder, 250 grams of butter, 180 grams of sugar, 1 packet of vanilla sugar, and 6 egg yolks. For the topping, you need 6 egg whites, 250 grams of sugar, 200 grams of ground hazelnuts, and of course currants, namely 750 grams.

  1. Mix the flour with the baking powder and then knead all the dough ingredients together. The dough should rest in the fridge for about 30 minutes.
  2. Beat the egg whites until stiff and gradually add 250 grams of sugar.
  3. Now fold the washed and drained currants and hazelnuts into the egg white mixture.
  4. Grease a baking sheet and roll out the chilled dough on it. Then spread the currant mixture on the dough and bake everything for about 50 minutes at 180 degrees top/bottom heat.

Red currant crumble

You probably know the apple crumble. And the dessert also succeeds with currants. It’s ready quickly and a real treat when warm.

  1. Quickly knead a crumble dough from 300 grams of flour, 200 grams of butter, 100 grams of sugar, a pinch of cinnamon, and a pinch of salt.
  2. Wash the currants and drain well.
  3. Small baking tins are best for baking. Grease them well and fill them about halfway with the prepared dough, which you press down well. Leave about 1/3 of the dough for crumbles later.
  4. Next come the currants, which you spread over the dough. It can be a good handful per mold. So that the dessert does not turn out too sour, you can sprinkle vanilla sugar or brown sugar on the currants.
  5. Finally, crumble up the remaining batter and sprinkle these crumbles over your dessert until the currants are just peeking out in a few spots.
  6. At 175 degrees, the current dessert needs about 20 to 30 minutes. When the crumbles are a nice golden brown, it’s done.

Creamy current quark dessert
