Ingredients for 1 servings:

  • 5 chili pepper(s), dried red, pitted and soaked
  • 5 shallots, finely chopped
  • 10 garlic cloves, chopped
  • 1 tsp galangal (galangal root), finely chopped
  • 1 tbsp lemongrass, chopped
  • 1 tsp kaffir lime leaves, finely chopped
  • 2 tsp coriander root, finely chopped
  • 5 peppercorns
  • 1 tbsp coriander, roasted and ground
  • 1 tsp cumin, roasted
  • 1 tsp salt
  • 1 tsp shrimp paste

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Crush the coriander seeds, cumin, and peppercorns in a mortar and pestle. Set aside in a separate bowl. Crush the chilies with salt. Gradually add all the other ingredients and grind well until a creamy paste forms. Finally, add the cumin mixture and shrimp paste and mix well.
