Ingredients for 1 servings:
- 5 chili pepper(s), dried red, pitted and soaked
- 5 shallots, finely chopped
- 10 garlic cloves, chopped
- 1 tsp galangal (galangal root), finely chopped
- 1 tbsp lemongrass, chopped
- 1 tsp kaffir lime leaves, finely chopped
- 2 tsp coriander root, finely chopped
- 5 peppercorns
- 1 tbsp coriander, roasted and ground
- 1 tsp cumin, roasted
- 1 tsp salt
- 1 tsp shrimp paste

Crush the coriander seeds, cumin, and peppercorns in a mortar and pestle. Set aside in a separate bowl. Crush the chilies with salt. Gradually add all the other ingredients and grind well until a creamy paste forms. Finally, add the cumin mixture and shrimp paste and mix well.
