Red fruit jelly

Ingredients for 8 servings:

  • 1 pack of raspberries (frozen, approx. 250 g)
  • 1 pack of mixed berries (frozen, approx. 250 g)
  • 1 jar sour cherries (approx. 500 g), drained
  • 60 g cornstarch (maizena)
  • 180 g sugar
  • ½ lemon(s), the juice
  • 1 liter blackcurrant juice, cold
  • e.g. whipped cream (Obers), liquid
  • e.g. ice cream (vanilla)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

without alcohol

Mix the cornstarch with a little cold currant juice. Then bring to a boil along with the remaining currant juice, the sour cherry juice, and sugar. Now add the fruit and bring to a boil again, if necessary, so that the cornstarch taste is removed—but the fruit should not break down. Let cool—preferably overnight. Serve with whipped cream and vanilla ice cream.
