Red lentil chocolate waffles

Ingredients for 6 servings:

  • 200 g lentils, red
  • 400 ml water
  • 2 packets of vanilla sugar
  • 1 pinch of salt
  • 30 g cocoa
  • 3 tbsp, heaped whole wheat flour
  • 3 tbsp sugar
  • 2 tsp, leveled baking powder
  • 4 tbsp sunflower oil
  • e.g. powdered sugar
  • n.e. Skyr with vanilla flavor
  • n. B. Berries
  • Oil for the waffle iron

Instructions

Working time approx. 10 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 20 minutes; Total time approx. 4 hours 30 minutes

Add the lentils to the water and let them soak overnight or for at least 4 hours. Then puree until smooth. Combine the flour, sugar, baking powder, cocoa powder, salt, and vanilla sugar. Then add to the lentil puree and mix well. Grease the waffle iron with oil. Pour a portion of batter into the waffle iron and bake until soft or crispy, depending on your preference. Sprinkle with powdered sugar. It’s even healthier with vanilla skyr and fruit.
