Red lentil patty

Ingredients for 3 servings:

  • 300 ml vegetable broth or beef broth
  • 80 g oat flakes
  • 200 g lentils, red
  • 2 eggs
  • 2 carrots
  • 1 onion(s)
  • 40 g wholemeal flour
  • salt and pepper
  • curry
  • Cumin powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Simple, vegetarian

Simmer the red lentils in the broth for about 10 minutes, by which time almost all of the broth should be absorbed. In the meantime, finely dice the onion, grate the carrots, and mix them with the oats and whole-wheat flour. Then add the eggs and season generously with curry, chili, salt, pepper, and, very importantly, plenty of cumin. Once the lentils have cooled and the liquid has been absorbed, add the lentils to the mixture and mix well. Form into small patties and fry in a pan until nicely browned. Serve with a salad and a curd and yogurt dip.
