Red lentil salad with feta

Ingredients for 1 servings:

  • 1 cup lentils, red
  • 1 pack of soup vegetables
  • 1 m.-sized onion(s)
  • 3 large tomatoes
  • 200 g feta cheese
  • 2 tbsp balsamic vinegar
  • 2 tsp mustard
  • 2 tsp maple syrup
  • some oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

vegetarian, high in protein, low in carb

Cook the lentils until al dente. Dice the onions and vegetables, sauté in oil. Caramelize with maple syrup and then deglaze with vinegar. Dice the tomatoes. In a bowl, combine the tomatoes, lentils, and vegetables. Crumble the feta cheese and mix in. Season with salt and pepper. Mix the balsamic and mustard dressing and stir into the salad. Tips: You can also use brown lentils. The dressing can also be modified. A fruit vinegar, such as raspberry vinegar, also goes well with the salad.
