Ingredients for 4 servings:

  • 1 cauliflower
  • 2 tsp Madras curry powder
  • 3 cardamom pods
  • 1 cinnamon stick(s)
  • 20 ml sesame oil
  • 50 g butter
  • 125 g yogurt
  • 1 lime(s), juice
  • 1 ½ bunch coriander

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour

Indian evening

Sauté all the spices in sesame oil and butter in a pot and let it simmer for 10 minutes. Simmer the cauliflower in salted water for about 15 minutes, until al dente. Brush the still-warm cauliflower with the spiced oil and bake at 160°C (convection oven) for about 30 minutes. Season the yogurt with lime juice and serve with the cauliflower and cilantro.
