Red onion – blueberry – confit

Ingredients for 1 servings:

  • 1 large onion(s), red
  • 1 handful of blueberries, fresh or frozen
  • 2 tbsp sugar
  • 2 tbsp, levelled vinegar (white wine vinegar)
  • salt and pepper
  • 1 tbsp oil

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

goes well with polenta, briefly roasted poultry

Peel the onion, halve it, and slice it into wafer-thin slices. Heat the oil in a pan. In a saucepan, warm the blueberries and sugar. Add the onion slices to the oil and fry lightly until they turn golden. Add the berry and sugar mixture, including any juice, and the white wine vinegar. Simmer, stirring constantly, until the onions are tender. Finally, season with salt and pepper.
