Red seitan with rice

Ingredients for 4 servings:

  • 300 g seitan
  • 300 g brown rice
  • 300 g pineapple
  • 2 stalks of lemongrass
  • 1 tbsp oil
  • ½ tbsp sambal oelek
  • 400 g coconut milk (can), unsweetened
  • 1 tbsp sugar cane granules
  • 3 tbsp soy sauce
  • 2 tbsp lime juice

Prepare the rice according to the package instructions. Meanwhile, cut the seitan into small cubes. Drain the pineapple thoroughly and dice it. Finely chop the lemongrass. Heat the oil in a wok and stir in the sambal oelek. Add the coconut milk and bring to a boil. Season with lemongrass, cane sugar granules, soy sauce, and lime juice. Mix in the seitan and pineapple and let it stand for about 7-8 minutes. Finally, stir in the cooked rice. Serve hot.
