Ingredients for 5 servings:

  • 1 kg tomatoes, ripe
  • 1 kg gelling sugar (1:1)
  • 1 lemon(s), unsprayed, peel

Instructions

Wash the tomatoes, remove the stems, and cut into small pieces. Cook in a saucepan over low heat without adding any water until soft, then pass through a fine sieve. Peel the lemon zest, preferably in large pieces, using a vegetable peeler. Combine the tomato paste, gelling sugar, and lemon zest in a saucepan, bring to a boil, and simmer for at least 3 minutes. Remove the lemon zest. While still hot, pour into prepared jars and seal.
