Red wine plums

Ingredients for 1 servings:

  • 4 kg plums, Bühler plums (use large, firm, but ripe fruits)
  • ¾ liter red wine vinegar or raspberry vinegar
  • ¾ liter red wine
  • 1 ½ kg brown sugar
  • 5 cloves
  • 2 stalk(s) cinnamon

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 25 minutes

Rub the plums thoroughly with a cloth and then pierce them several times with a knitting needle or a skewer. Bring the vinegar, sugar, and spices to a boil, then skim off the skims. Boil the plums in batches in the liquid, then transfer them to a suitably sized earthenware pot. Add the red wine to the liquid and simmer for about another 25 minutes. Pour everything into the earthenware pot. Cover with parchment paper. These plums are a great side dish for game in the fall and winter. They can also be used to make Viennese plum dumplings.
