Refreshing corn salad

Ingredients for 4 servings:

  • 1 can corn kernels
  • 2 large carrots
  • ½ cup bell peppers, pickled strips from the jar
  • 2 m.-sized apples
  • 1 dash of lime juice
  • 1 cup of yogurt
  • 2 tsp oil
  • e.g. Paprika powder, hot
  • 1 tsp sugar
  • Salt

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

Drain the corn kernels and bell pepper strips and place them in a bowl. Peel and coarsely grate the carrots, and add them. Peel and core the apples, also coarsely grate them, and add them. Immediately drizzle with lime juice to prevent them from browning. Make the dressing with the remaining ingredients and toss it over the salad. Season to taste and let it marinate in the refrigerator.
