Reindeer stew

Ingredients for 4 servings:

  • ½ kg game meat (reindeer meat), shaved, frozen
  • 150 g bacon, diced
  • 250 g mushrooms
  • 2 tbsp oil, for frying
  • 2 dl water
  • 3 dl sour cream
  • 1 dl milk
  • 3 slices of goat cheese
  • 5 juniper berries, crushed
  • ½ tsp thyme, dried
  • 1 tsp salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Finnbiff

Quickly fry the shaved reindeer meat, bacon, and mushrooms in batches in a pan over high heat. Then transfer to a large pot. Add water, bring to a boil briefly, and then let stand for 10 minutes. Then add the sour cream, milk, goat cheese, juniper berries, and thyme, and let stand for another 5 minutes. Season with salt and pepper. Traditionally eaten in Norway with homemade mashed potatoes and lingonberry jam. This is a traditional Sami dish from Northern Norway/Finnmark.
