Ingredients for 1 servings:
- 2 onions, finely diced
- 75 g smoked bacon, finely diced
- 3 tbsp olive oil
- ½ bunch rosemary, finely chopped
- 75 g seeds, mixed, e.g. sunflower, pine, pumpkin
- 2 garlic cloves, finely chopped
- 1 cube of yeast, fresh
- 550 g flour, type 405
- ½ tsp salt
- 1 pinch(s) black pepper
- 300 ml water, lukewarm
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 55 minutes
Sauté the onions and bacon in 1 tbsp olive oil for about 2 minutes. Finely chop the seeds. Mix the flour with salt, pepper, garlic, rosemary, and seeds. Add the oil to the lukewarm water and dissolve the yeast cube in it. Add to the flour mixture and knead into a smooth dough. Cover the dough and let it rise in a warm place until it has visibly increased in size. Knead the dough again vigorously. Shape into a loaf and let it rise for another 20-30 minutes. Preheat the oven to 200°C (top/bottom heat). Spray the loaf with water and bake for about 35 minutes. Spray with water 1-2 more times during baking. Tastes particularly good with lard or homemade garlic butter and as a side dish to grilled food or hearty salads.
