Rhubarb cake a la Gudrun

Ingredients for 1 servings:

  • 80 g sugar
  • 80 g butter
  • 2 eggs
  • 1 pinch of salt
  • 200 g flour
  • 1 ½ tsp baking powder
  • 125 ml milk
  • 1 pinch(s) lemon peel
  • 250 g rhubarb or other fruit of your choice, prepared bite-sized
  • Fat for the mold
  • Breadcrumbs for the mold

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Make a batter from the first seven ingredients. Grease a springform pan and sprinkle with breadcrumbs. Pour the batter into the pan and smooth it out. Spread the rhubarb or other fruit of your choice evenly over the batter. Bake in a preheated oven at 180°C (top/bottom heat) for about 35 minutes (or 30 minutes at 175°C (fan oven).
