Rhubarb chutney

Ingredients for 1 servings:

  • 1,000 g rhubarb
  • 250 g onion(s)
  • 250 g sultanas
  • 14 g mustard seeds
  • 1 tsp spice mix (2/3 ginger, 1/3 cinnamon)
  • 1 tsp pepper
  • 1 tsp salt
  • ¼ tsp cayenne pepper
  • 0.38 liters of vinegar
  • 750 g brown sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the rhubarb, peel it, and cut it into small pieces. Finely chop the onions. Bring all ingredients, except the sugar, to a boil in a saucepan. Then slowly add the sugar and simmer over low heat until the mixture has the consistency of thick jam. Pour hot into prepared jars. It tastes fantastic with grilled meat, but also goes wonderfully with raclette or fondue, and with cheese.
