Rhubarb compote with semolina dumplings

Ingredients for 4 servings:

  • 750 g rhubarb
  • 150 ml orange juice
  • ½ stalk(s) cinnamon
  • 200 g sugar
  • ½ liter of milk
  • 2 tbsp honey
  • 1 tsp orange peel, grated
  • 70 g semolina
  • 50 g natural yogurt

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Trim the rhubarb and cut into 3-centimeter pieces. Combine the pieces with the orange juice and cinnamon stick in a microwave-safe bowl. Cover and cook for 4.5 minutes at 500 watts. Stir in the sugar and cook for another 30 seconds. Cover and bring the milk, honey, and orange zest to a boil for 6 minutes at 600 watts. Add the semolina and stir well. Cook for 7 minutes at 500 watts. Allow the mixture to cool slightly, then stir in the yogurt. Scoop out dumplings with two teaspoons and arrange them on top of the rhubarb compote.
