Ingredients for 4 servings:

  • 450 g rhubarb (cleaned 400 g)
  • 125 g sugar
  • 100 g quark
  • 50 ml cream
  • 600 ml milk
  • ½ orange(s), peel

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

… for 4 glasses of 250 ml each

Preparation: Wash and trim the rhubarb, and if necessary, halve or quarter it lengthwise. Then cut into approximately 3 cm long pieces. Stir with the sugar over low heat until the rhubarb juices. Cover and simmer for about 10 minutes until soft. Allow to cool, then refrigerate thoroughly. For the shake, puree the rhubarb compote with sugar, well-chilled quark, cream, milk, and grated orange zest. Serve cold. Alternatively, omit the cream and use 150 g of cream quark instead.
