Ingredients for 4 servings:
- 400 g rice, cooked
- 250 g mayonnaise
- 1 can pineapple, pieces
- 100 g sultanas
- 100 g peanuts, fat-free roasted
- 2 tsp curry powder
- salt and pepper
- some vinegar
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Mix the rice with the mayonnaise and season with curry powder, salt, pepper, vinegar, and a little pineapple juice. Fold in the well-drained pineapple and the sultanas. Add the peanuts just before serving.
