Ingredients for 3 servings:

  • 1 cup basmati
  • 1 small onion(s)
  • 315 g mushrooms, fresh sliced
  • 1 can of corn
  • 1 can kidney beans
  • 1 large carrot(s)
  • 1 jar Ajvar, approx. 500 ml
  • Salt
  • some Tabasco
  • oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the rice until tender. Finely dice the onion, peel and thinly slice the carrot, and drain the canned vegetables. Fry the onions in a little oil in a non-stick pan until translucent, then add the mushrooms and carrots and fry. Stir in the ajvar. If it’s too thick, add a little water. Stir in the kidney beans and continue simmering. Stir in the cooked rice, then add the corn and mix everything together. Season with salt and Tabasco, stir, and serve.
