Ingredients for 4 servings:
- 2 tbsp olive oil
- 250 g lean pork, cut into 2-3 cm cubes
- 250 g lean beef, cut into 2-3 cm cubes
- 125 g ham, thinly sliced, cut into 2-3 cm pieces
- 1 onion(s), chopped
- 220 g rice, long grain rice
- 600 ml chicken broth
- 2 tbsp lemon juice, freshly squeezed
- 125 g paprika sausage, linguiça or chouriço or other, in thin slices
- Salt, to taste
- Peppers – strips, roasted, green or red
- some lemon wedges
Instructions

“Energy-giving” rice
Heat the olive oil in a large saucepan over medium heat. Add the meat cubes and cook for 7-8 minutes on all sides until lightly browned. Add the diced onion and ham and sauté for 10 minutes, until the onions are soft. Sprinkle in the rice and stir thoroughly to coat evenly with oil. Top with the broth and lemon juice and add the sausage slices. Bring everything to a boil over high heat. Reduce heat to low and simmer for about 25 minutes, until the rice is tender. Season with salt. Serve on a warmed platter, garnish with the roasted bell pepper strips and lemon wedges, and serve warm.
