Ingredients for 8 servings:

  • 500 g pork (belly) in one piece
  • 500 g beef, in one piece
  • 1 chicken, ready to cook
  • 1 paprika sausage
  • 1 smoked black pudding »morçela«
  • 1 kg potatoes, medium-sized
  • 4 carrots, in pieces
  • 2 kohlrabi, in pieces
  • ½ white cabbage, cleaned, without stalk, quartered
  • ½ savoy cabbage, cleaned and quartered
  • 200 g beans, brown
  • 200 g rice
  • Salt

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Portuguese meat stew

Cook all meats and beans in plenty of salted water until tender. Remove the meat pieces, strain the cooking broth, and keep the beans warm. Cook the vegetables in the broth until tender. Cook the rice in 1/2 liter of the meat and vegetable broth until lightly cooked. Return the meat and sausage to the remaining broth and heat through. Arrange the meat and sausage in the center of a serving tray, then baste the vegetables around it with hot broth. Serve the rice and beans separately.
