Rice gratin with broccoli and cauliflower

Ingredients for 2 servings:

  • 125 g whole grain rice
  • some salt
  • 500 g broccoli, frozen or fresh
  • 500 g cauliflower, frozen or fresh
  • ½ pack of meat substitute (vegetarian ham cubes)
  • 2 cups sour cream
  • some pepper, freshly ground
  • some spice mix (Poivre saveur)
  • some lemon juice
  • 100 g Gouda in one piece

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 5 minutes

with vegetarian ham cubes

Cook the rice in salted water according to the package instructions. Cook the cauliflower and broccoli florets in salted water for about 10-20 minutes (depending on whether you’re using frozen or fresh cauliflower). Meanwhile, season the sour cream with salt, pepper, a little lemon juice, and Poivre Saveur, and fold in half of the cheese. Place the broccoli and cauliflower in a baking dish, sprinkle with the ham cubes, top with the sour cream mixture, sprinkle with the remaining cheese, and bake at 180°C for about 15 minutes. Serve with the rice.
