Delicious and fresh pasta salad

Ingredients for 4 servings:

  • arugula
  • 100 g bacon, diced
  • 300 g pasta
  • 100 g pumpkin seeds
  • 10 small tomatoes
  • 1 can of mushrooms
  • 1 tsp salt
  • 1 tbsp olive oil
  • 4 tbsp olive oil
  • 2 tbsp water
  • 2 tbsp balsamic vinegar
  • salt and pepper

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Cook the pasta according to the package instructions and let it cool. Then transfer it to a fresh container. Fry the bacon and mushrooms in a little olive oil. Then transfer it to the pasta and let it cool. Briefly fry the pumpkin seeds in the remaining oil in the pan, but be careful, they burn easily. Once everything has cooled slightly, wash the tomatoes and cut them in half, also wash the arugula, and mix both together. Add salt to taste. For the dressing, whisk all the ingredients together and then pour over the salad.
