- 2 chicken schnitzels
- 1 bell pepper(s), red
- 2 tomatoes
- 1 tsp vegetable broth
- 1 tsp curry
- ½ liter coconut milk
- Oil for frying
- 150 g rice

Recipe from Kenya
Cook the rice as usual. Dice the onion and fry it in oil until translucent. Cut the chicken cutlets into bite-sized pieces and fry them. Chop the peppers and tomatoes and add them to the pan. Add 1 teaspoon of vegetable stock, 1 teaspoon of curry powder, and coconut milk. Simmer for 10-15 minutes. Serve with the rice.
