Rice patties with carrots and peas

Ingredients for 2 servings:

  • 1 serving of cooked rice, leftovers from the day before
  • 1 handful of oat flakes, wholegrain
  • 1 carrot(s)
  • 1 handful of peas
  • 1 egg(s)
  • 1 garlic clove(s), squeezed
  • salt and pepper
  • n. B. Vegetable stock powder
  • possibly flour for binding
  • some fat for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Leftover rice from the day before is perfect for making patties. To do this, combine the rice with the oatmeal, diced or grated carrot, peas, egg, and garlic, and season with salt, pepper, and vegetable stock powder to taste. If desired, thicken the batter with a little flour. Heat a pan with a little fat, form patties from the batter, and fry. Serve with a green salad. The ingredients can be easily adjusted in type and quantity; I always use whatever’s on hand.
