Rice salad with apples

Ingredients for 4 servings:

  • ½ onion(s)
  • 1 apple, sour
  • 1 red bell pepper(s)
  • 200 g cooked ham
  • 100 g cheese (Gouda)
  • 2 cups rice
  • Water
  • Salt
  • 1 tbsp oil
  • herbal vinegar

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Cook the rice in plenty of salted water, drain, and set aside to cool. Wash, deseed, and finely dice the bell peppers. Do the same with the apple. Dice the onion. Finely chop the ham and cheese and add everything to the cooled rice. Mix everything well. Season with 1 tablespoon of oil, a little vinegar, and salt. Let it marinate in the refrigerator for about 1 hour. The salad is also delicious if prepared the day before and refrigerated. If you like, you can also add fresh herbs, such as parsley, to the salad.
