Rice salad with arugula, onions and feta cheese

Ingredients for 2 servings:

  • 210 g basmati rice
  • 100 g arugula
  • 1 onion(s), red
  • 200 g sheep’s cheese
  • 5 radishes
  • 3 tbsp olive oil
  • Herbs of Provence
  • turmeric
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

Cook the rice according to the package instructions. Wash the arugula and radishes. Chop the radishes and onions into the smallest possible pieces. Cut the feta cheese into small, bite-sized pieces. In a bowl, mix the arugula, onions, feta cheese, and radishes with olive oil and seasoning. When the rice is done, drain, mix well with the other ingredients, and season the salad to taste.
