Rice with Ajvar

Ingredients for 3 servings:

  • 1 stalk(s) leek
  • 200 g cooked ham
  • 400 g tomatoes, chopped from the can
  • ¾ jar Ajvar, mild or hot
  • 1 ½ cup(s) rice
  • salt water
  • 200 g cheese, grated
  • salt and pepper
  • Vegetable broth, instant

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Pan-fried dish with melted cheese

Cook approximately 1-2 cups of rice (or 2 boil-in-the-bag rice) in salted water and continue with the pan cooking. Depending on the size, finely chop 1-2 leeks or a bunch of spring onions and sauté them in a large pan (all ingredients will be finished cooking in this pan at the end). You can add other suitable vegetables to the leeks (e.g., 1 bell pepper). Cut 200g of cooked ham into small cubes and add them to the pan. Alternatively, smoked diced ham can be used. This adds flavor to the dish, but it should be fine and tender so you don’t have to chew on each individual ham cube for long. Use a small can of diced tomatoes (400g) to deglaze the pan and stir in 3/4 of a jar of ajvar (mild or hot, depending on your taste). Now mix everything together and stir in the cooked rice. Season to taste with pepper, salt, and vegetable stock. Finally, spread 200g of grated cheese over the smooth rice mixture. Put the lid back on and wait another 5 minutes on level 1-2 until the cheese has melted. Tip: If the rice mixture is too dry, pour a little water over it before putting the lid back on. This will prevent it from burning.
