Ingredients for 2 servings:
- 1 cup(s) rice, small
- 1 small onion(s), finely diced
- 1 clove(s) garlic, finely chopped
- 1 bell pepper(s), red
- 200 g leaf spinach
- 1 cup(s) vegetable broth, small
- 1 tbsp olive oil
- Salt
- pepper

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Heat olive oil in a non-stick pan and add the diced onion and finely chopped garlic. Sauté briefly, then add the bell peppers and rice. Season with salt and pepper. Stir in the vegetable stock and cook for about 20-25 minutes. Please test the rice to see if it has the right consistency. Finally, stir in the fresh spinach and serve as a side dish.
